Last food I would recommend to eat in Mexico. If you want it, buy it from a local market and cut it yourself. They need to be fresh and away from sun or steer dust so you don't get dick by eating it.

As it slow-cooks, the tripe softens to a tender texture while releasing natural collagen that thickens the broth into a rich, velvety sauce.
