Reverse sear is hands-down the best way to cook a thick steak… if you do it right. Salt it heavily the night before and leave it uncovered in the fridge so the outside dries out. Next day, bring it to room temp, season again with just salt and coarse black pepper, then slow-cook it in a 250° oven until it hits about 115° inside. Then hit a medium-high cast iron for 60-90 seconds per side, baste with butter, garlic, and herbs, and rest. You end up with an even medium-rare edge to edge and a crust that actually lives up to the hype.

This guy shares his favorite (and very simple and fast) way to cook a rare/medium-rare steak. Hot pan, salt and pepper only. He cooks it for 2 minutes and 45 seconds on each side, then does the sides... finishes it with garlic and butter. He jokingly says if you like your steak more well-done, “you’re a child.” How do you like your steaks cooked? I personally like my steaks rare to medium-rare — more on the rare side though 🥩

Cast iron is so much easier to clean than most people think. The key is heating the pan back up so stuck-on food releases, then giving it a good scrub (yes, a little soap is fine). Dry it completely — water is the real enemy — and finish with a thin layer of tallow, lard, bacon grease, oil (or whatever you prefer) while it’s still warm. That’s it. No complicated ritual required. Once you get comfortable with it, cast iron is one of the most durable and healthier pans you can cook on — no chemical non-stick coating to worry about.

The longer one broke down so much the meat almost turned soft. Rogan called it sensational. He also described his own method. Traeger or an offset grill with hardwood. Bring it up slow to about 250 degrees, cook until the internal hits around 120, then sear hard on cast iron or an infrared grill. The idea is simple.
