I work on EDM machines, but how come wire EDM uses distilled water as an electrolyte but die sinking EDM doesn't?

I love those markforged printers. Being able to 3D print in metal is a game changer. You can literally go from concept to testing a functional prototype in a week. It's my man cave dreams to have one of these bad boys.
