Why can’t you cut it hot?

Fresh out of the oven bread is the best tasting bread you'll ever grace your taste buds with. If you're going to eat it right away cutting it while it's hot is fuckin fine. If you're not going to eat it right away, don't cut it, the interior is still baking, you'll let all of the steam which provides moisture escape, and it will be less flavorful as natural alcohols that bake in during cooling escape with the steam.

It’s not quite baked… gummy in the center and the crust is obviously not done... Needed about 5-8 more minutes. So, the person who doesn’t fully bake bread, cuts it when hot. Are we surprised?

Wrong. Bake two. Eat one hot and keep the other to cool down.

She did great for a first loaf. My first dozen+ loaves were terribly underproofed before I got the hang of it. It’s called practice.

Shit we make it every week and you think anyone waits even for a minute to cut in to the first loaf you are out your fucking mind.

If it’s cut while hot, it destroys the crumb and makes the bread gummy because essential steam is allowed to release.

Always cut hot. Enjoy with butter. But store cut side down after cutting. It's worth the slight reduction in quality in what you don't eat immediately, which should be half the loaf. Lol
