This is Taiwanese Egg pancake roll. The block placed at one end is braised tofu.

What is the stuff he sprayed on the griddle? And what is the block of stuff he added to the cooked omelet?

It's a rice stuffing that's made a little crunchy and what's poured over the omelette is a kind of sauce.

The block is probably tofu, and the cooking process was so satisfying that I focused more on the technique than the ingredients.
