Black pudding is so good. It’s almost like a gnarlier scrapple

wtf is a scrapple????

Butterfly Sails's profile picture
Butterfly Sails10 months ago

@swampist Scrapple is delicious. It’s made with scrap pork, ground and mixed with cornmeal into a loaf, then sliced and fried. Generally like eating sausage, but softer inside, with crispy edges.

@butterflysails @swampist Wait…you have never tried scrapple?? It is very big on the east coast at least in NJ and PA. It is very good! Like butterflysails said, slice it, fry it and enjoy.

@JWScotten @SouthDallasFood @butterflysails @swampist Wow did they have it sent to them from SE-PA or S-NJ? Cuz like it’s almost exclusively a SE-PA, S-NJ, or DE thing like they don’t even really have scrapple in Trenton and in NYC they’ve literally never heard of it? Is it common in other areas besides the greater Philly area?

@Mankyanne1063 @SouthDallasFood @PrincessWB420 TRY GOING TO THE SCOTTISH HIGHLANDS AND CAPTURING A WILD HAGGIS. NOT SURE IF IT'S BECAUSE THEY'RE FREE-RANGE OR IT'S THE WEATHER, BUT WILD HAGGIS TASTES WAY BETTER THAN FARMED HAGGIS. WE'RE TALKING LIKE A POT NOODLE TO GOURMET MEAL SORT OF DIFFERENCE.

Black pudding, here’s a recipe … Traditional Homemade Black Pudding Recipe (UK-style) Ingredients (makes approx. 1-2 kg): - 1 litre fresh pig's blood (or rehydrated dried pig's blood) - 300-500g pork back fat or suet, diced - 200-300g oatmeal or porridge oats (pinhead/steel-cut preferred) - 100-200g cooked pearl barley or groats (optional for texture) - 1 large onion, finely diced - Spices: 2-3 tsp salt, 1-2 tsp ground white/black pepper, 1 tsp ground coriander, 1 tsp mixed spice/allspice (nutmeg, cinnamon, cloves), optional mace or thyme - Optional: 100-200ml cream for richness **Steps**: 1. Mix blood with spices and salt to prevent clotting. 2. Gently cook onion in some fat until soft; add remaining diced fat to melt slightly. 3. Stir in oats (and barley if using); cook briefly to thicken. 4. Combine with blood mixture; add cream if desired. Mix to a thick, pourable consistency. 5. Fill into sausage casings (hog or synthetic), tying into rings or links (do not overfill). 6. Simmer gently in water (80-85°C, do not boil) for 20-45 minutes until firm. 7. Cool in ice water, then refrigerate. 8. Slice and fry until crispy to serve.

Tastes great. I have it with new potatoes, peas, fried egg and creamy mustard sauce, delicious. It’s often a starter in many uk restaurants as well as with a full English breakfast.

Maggi's profile picture

@SouthDallasFood They also serve white pudding which isn’t as popular in England.

@GeeNifty What’s in white pudding???

Maggi's profile picture
Maggi10 months ago

Grok did a quick recipe… Concise Homemade White Pudding Recipe (Irish/UK Style) **Ingredients** (makes about 1kg / 4-6 servings): - 500g pork shoulder or belly (with fat) - 200g beef suet or pork back fat - 200g medium oatmeal - 100g breadcrumbs or potato flour - 1 medium onion, finely chopped - 300ml milk or water - 2 tsp salt - 1 tsp white pepper - ½ tsp ground mace or allspice (optional) - Sausage casings (optional, for traditional shape) **Method**: 1. Soak oatmeal in milk/water for 1-2 hours (or overnight for better texture). 2. Mince pork and fat finely (or use food processor). 3. Mix all ingredients thoroughly into a stiff paste. 4. Stuff into casings if using, or form into logs wrapped in cling film/foil. 5. Simmer in hot water (not boiling) for 45-60 minutes until firm. 6. Cool, then slice and fry until golden. Serve fried with breakfast, eggs, or bacon. Store in fridge up to 5 days.

Just put it on a plate. Nobody, not even an obese American, could eat that in a sandwich. The black things are black pudding. Basically dried blood.

Kalakipos's profile picture

Black pudding. Made with pig or cow blood with fat and cereal mixed in. White pudding is also used. It omits the blood and uses suet. Sometimes including liver with cereal and spices.
