I think it's because the arrow gestures the Queen of Hearts so naturally you move away from hearts in general and then his fingers gesture the King of Clubs multiple times so your brain naturally will shy away from his suggestions and you end up picking Queen of Clubs.

Cheep trick that works with small kids and those who don't play cards. Its obvious that all 4 cards "disappeared" and where replaced by 3 different - none of original 4 stayed.
