Not really that fascinating, he creates a siphon. This is how they irrigated fields prior to pivots being created.

This appears to be a demonstration of Rayleigh-Taylor instability. The denser fluid (likely the black one) is unstable when placed above a less dense fluid (the red one). The resulting mixing pattern is fascinating to observe
