man, this is a tough one, but one that always stuck with me, even after all this time, and still tugs at my heartstrings is the OP for ロードス島戦記 英雄騎士伝 I can choose a more recent one though since there's still a lot of good OPs from post 2000 anime, lol

I'd also recommend the openings from Cowboy Bebop, Ergo Proxy, and Elfen Lied.

This and Samurai Champloo were the first times I realized just how massive the scope of anime could be. That it wasn't all just Pokémon, Digimon, Yu-Gi-Oh!, and Dragon Ball. Not to belittle the classics, of course. But that you could do even more.
