Marble is basically calcium carbonate, it reacts with acidic compounds. The coffee's pH is between 4,9 and 5,2, which is acidic and reacts (in a small amount) with the marble's calcium carbonate, hence "the stain". Besides of all the coffee's pigments, of course.
