Simple science! Sugar is an organic compound (Carbon-based), so the glowing hot spoon causes instant chemical combustion, catching fire. 🔥 Salt has an extremely high melting point (~801°C) and no carbon, so it doesn't burn. Water instantly absorbs the heat and cools the spoon down.
