For eg I can write with both hands. But what she is doing is far beyond that. Her brain is processing two sets of instructions inpdependently.

I can write with either hand, which is a great way to confuse people, seeing me write with a different hand than before. I used to paint and would use two brushes at once. Left side left hand, right side right hand.

They were able to write with both hands at the same time. But they could write completely different things with each hand. Example: Sentence with right and arithmetic with left.

The more precise term to call someone being able to write with both hands simultaneously would be synamphichiry from Greek meaning something like “using both hands together at the same time”.
