It knows by size. A laser rebounds off objects and if the object reflects enough laser then it's got a large surface area, thus clearly a tomato.

This is why grocery store tomatoes are so bland. Doing this with a tomato that's actually ripe enough to develop flavor would absolutely destroy it (and if it didn't it'd crush itself during shipping anyway)

^— This machine is why: “Tomatoes don’t taste like they used to” In order to be able to do this sorting the tomatoes have to be picked when they are still hard. That means they aren’t ripe. All the flavor and nutrients come from ripening on the plant. So when you pick them early they end up not really tasting like much of anything. Another way to get cheap “food”.

These machines helped make modern supermarket tomatoes firmer and less flavorful on purpose. Breeders changed the genetics so they survive machine harvesting & sorting without turning to mush.
