The condiments and the Au Jus are where all the flavor comes in. That piece of meat is almost flavorless, but it really is a shame to let it go to waste so if you can cook it and make it pliable to chew, I say go for it.

Not a fan of eye of round, extremely lean, no flavor, no juice. 🤢
Don’t disagree but I think he’s showing how you can transform a pretty inexpensive cut into something much better. Also he was smart to cut it thin, otherwise would be too chewy.
