我感觉应该是用酱油增加底色，这样煮出来的土豆等会盛出来后加入其他菜里，这样刚出来的土豆颜色上就能和这盘菜融为一体。同时加盐其实也是增加土豆的咸味，不然等会放到其他菜里的时候，土豆只有原本的土豆味，没有和菜的味道融合。你也不可能重新往新的菜里面加入第二遍盐。

比如做炖菜的时候，不希望土豆过度烹饪，单独煮一锅土豆，等你的炖菜差不多了，再把这一锅煮好的土豆单独捞出来放进炖菜里面，稍微再煮一下。
