He used it, in g5 he is covered in conquers haki, just not in the right way, a bit like in Wano he learned to project the armor's haki outwards. And then you don't even defeat them that way, you just slow down their healing.

I actually think he used it when he was supporting Bonney in attacking Saturn which is why he went into pieces from his punches.
