100% Rudy has my vote. Dess is the non-obvious red herring, Carol is the obvious red herring, and Papyrus is confusing. Rudy has everything one needs to be the Knight. Carol’s sword is in the bedroom, which could also be Rudy’s, and all that lines up for her does for him.

One hole here. The Knight and Kris are clearly close, so Rudy being confused at their actions wouldn't make much sense. He should know exactly why Kris is "acting so strange"
