This is just like eating canned/jarred food from the store, she just made it herself which is better because it doesn't have all the garbage chemicals and preservatives.
Why? It's pressure sealed, my grandma died and we ate 30 plus pressure sealed jars of fresh vegetables, peaches and stews that were sealed 8 yrs before, tasted like they came straight from her garden.
