A good quick summary of my approach to writing. If I can't write something I feel great about in 5-10 minutes, I just throw it away and start over. I don't try to massage the bad into the good, I erase the bad to make way for something better to emerge. For me, throwing it away is faster, and the outcome better, than trying to recover a piece of writing that isn't headed where I want it.

Keeping warm with this French Onion Soup! Full recipe below 👇 1 stick (4 ounces) unsalted butter 6 cups thinly sliced Vidalia or Spanish onions Kosher salt and freshly cracked black pepper 1 tablespoon all-purpose flour 1/4 cup dry sherry 5 cups beef stock 6 sprigs fresh thyme 8 slices Gruyere cheese (or Swiss) plus 1 cup grated Gruyere cheese 2 cups croutons In a large pot, melt the butter over medium heat. Add the onions all at once and a small splash of water. Season the onions with salt and pepper. Bring the onions to a simmer, stirring often. Reduce the heat if the onions begin to cook too fast. Cook until the onions are soft and translucent, about 15 minutes. (If you want a sweeter soup, continue to cook the onions until they caramelize to the richness of your preference.) Add the flour and cook for 3 minutes. Add the sherry and cook for a few minutes longer. Add the beef stock and bring to a very low simmer; simmer for about 35 minutes. Preheat the broiler to finish the soup. Add the thyme to the soup and simmer for 5 more minutes. Season with salt and pepper as needed. Remove the herbs. Ladle the soup into 4 soup crocks. Cover each crock with 2 slices of cheese and some croutons, then top with the shredded Gruyere. Transfer the crocks to a baking sheet and place under the broiler until the cheese bubbles and browns.

Shreddable by hand at that point, re-using the liquids, topped with spicy giardiniera and they're ready to go. Think they liked them?

I started making my meen moilee recipe, but deviated far enough from the original that I'll call it fish curry instead. I make this recipe so much that I like to throw in something different to keep it interesting!! What ingredient in your pantry ends up in a lot of the dishes that you cook? The vegetables I’m sautéing in the beginning are celery, carrots, and fennel with curry leaves and salt.

I was quoted $40,000 to replace my roof. It was only nine years old. Like, how is that possible? How are we thousands of years into this whole shelter thing and we still don't have anything better than asphalt shingles that crumble the second they get hit with hail like here in Texas? And I'm not the only one thinking about this because every time there's a hailstorm, entire neighborhoods get re-roofed. Insurance companies pay out billions. Insurance costs are through the roof. Homeowners are dealing with the chaos. And then we just put the same stupid, fragile shingles back on and wait for it to happen all over again. There has to be a better way. How do we have phones that can survive being dropped from buildings and cars that take impacts at high speed? We've got freaking rocket boosters landing themselves in the middle of the ocean But we can't make a roof that handles a little ice for falling from the sky. It just doesn't make sense. And when you see something like this, something that's clearly more durable, more advanced, something that actually solves the problem, you realize we've just been accepting mediocrity for way too long. It's not asphalt. It's engineered to last for decades. It's designed to take in impact. It looks better. It performs better. And it should have been the standard years ago. What frustrates me is that innovation in roofing has been so slow because nobody wants to be the first to try something new. Contractors just stick with what they know. "If it ain't broke, don't fix it." Homeowners go with what's cheap upfront, even if it costs more long term. And meanwhile, we're all just replacing roofs every decade like it's normal. It's not normal. It's a waste of money and resources. Someone finally said enough and built something that actually works. So here's an open call to all the innovators out there. We need more solutions like this. We need better materials, smarter designs, roofs that last 50 years instead of 10 because the market is massive and people are ready for something better.
