Respecting the continuity is the most important thing shows of this type can do.

I believe there was this one scene in Season 1 where Anakin talked to Grievous through a screen, and it's not until ROTS where he meets Grievous in person and says "you're shorter than I expected"

Exactly, meanwhile in Disney SW, you’d assume they didn’t even watch the films. Consistency matters!
