There are other materials like glass and metal, which are much easier to clean, but they are really hard on your knife.

Hi there, professional Chef here.. Bamboo is banned in every kitchen I've ever run.. They quickly become the nastiest surface in any kitchen.. See, bamboo is considered a poor choice for cutting boards primarily because its extreme hardness and high silica content rapidly dull and damage knife blades. Also, as a grass rather than wood, it requires intense adhesives that can contain formaldehyde. It is also prone to warping, splintering, and trapping bacteria in its fibrous structure. It is quite porous and can warp or trap food particles and bacteria in its fibers, making it less sanitary over time compared to high-quality hardwood. Durability Issues: Bamboo boards are prone to splitting, cracking, and developing "fuzzy" splinters that can get into food. You can never really clean it effectively, and most of them are the perfect material for mold to grow below the surface as it traps and keeps moisture even if the surface seems dry, then by the time you see it you've been using it already moldy for a while.. Epicurian is the preferred and most sanitary cutting board material you can have... This guy's trying to sell this cutting board brand but even it is a budget brand of bamboo boards, so guaranteed to be garbage.. Remember, Epicurian is what you want,

Wood absorbs bacteria because it’s porous. Doesn’t matter if it’s bamboo or not. It will absorb raw chicken juice and then leech back into raw vegetables and then you eat it. Ew.

I use a composite board. It contains thermoset phenolic resin (or similar food-grade resin), which is FDA-approved for food contact once fully cured. The curing process makes it stable and inert—it doesn't leach chemicals under normal use, and it doesn't flake off like soft plastics might.
