Radiant Silvergun for the Sega Saturn (Treasure/1998). Considered a masterpiece of the shmup genre. It is famous for its incredible 32-bit visuals, cinematic anime cutscenes, and a deep/unconventional gameplay loop. The Saturn release includes two distinct ways to play: Arcade Mode (faithful port of the original arcade) and Saturn Mode (exclusive mode featuring fully voiced anime cutscenes, animated by Studio Gonzo).

Gauntlet IV for Mega Drive (by M2/Tengen/1993) has a dedicated "Arcade Mode" which is essentially an excellent port of the original 1985 arcade classic. Also it has great audio in general and supports 4-player co-op through the Sega Tap adapter. And finally, a massive Quest mode.
