Look into the process of filling the grain. It’s the difference between a dull, unprofessional finish and a top notch job. And polyurethane doesn’t belong on furniture. Ever. Kudos for the enthusiasm, though. 👍

Varnish or shellac are best, but there are a bunch of oil finishes that are good too. The problem with polyurethane is that it’s permanent. That sounds like a good thing, but if you make a mistake, or you think the finish isn’t quite right, you can’t go back and correct it without a whole lot more sanding, and at that point you’re sanding through veneer, or causing other damage. In other words, varnish is reversible while polyurethane isn’t. With a well-made piece of furniture, the normal order is sanding sealer (which prevents splotches), grain filler, stain, varnish. You’re doing good though, keep it up. 😁
