The pitch correction required to follow earth curve is negligible compated to the corrections continuously applied for wind, turbulence, and control surface instabilities. Vertical, with respect to 'down', is always maintained by those continuous adjustments.

He may have taken math classes, but he missed the physics and the engineering classes which described all the forces on a body including gravity, aerodynamic, and dynamics. With a math degree, he clearly should’ve taken spherical geometry, which would explain everything.
