I don't see how the real phone could do what you've just showed in this demo. It's not a straight up reflection of the static screen, it's only perceived like that when looking at the phone straight on.

I've checked myself again and it just doesn't look like what you've implemented. I wish it did, it looks really cool like that, but it's not how that looks in reality. If you think I'm wrong, I'd love to see a video of that in action that matches that reflective implementation.

You have a gimbal lock when you rotate behind the subject.

The device is not rotating the direction the cursor is going. Go to the back of the iPhone, drag from top to bottom, the iPhone rotates the other way. It's a classic gimbal lock, you need another approach or to use a quaternion.
