Try laying a half roll of cheap paper towels in the "grease-gutter" of the griddle to sop up grease as you're griddling. Use tongs to turn it to absorb, then toss it 😉

I do that. I used to rinse my meat after cooking and before adding spices to get all the grease out.🧐🤣

Or just remove the meat with a slotted spoon, and make a roux. Or saute some onions and garlic in it and add the meat back afterwards

I've never thought of the paper towel trick. I use fat separators or refrigerating the fatty stock overnight and throwing away the fatcap but those require a good amount of liquid. Or plain old spoon-skimming. But not the paper towel trick.
