Superfood salad: 1/4 cup chopped parsley 3/4 cup quinoa (warmed up in microwave) 1/3 cup hemp seeds 1/3 cup diced bell pepper Olive oil vinaigrette: 1/2 cup olive oil 3 Tbsp red wine vinegar (or apple cider vinegar) 1/2 tsp thyme 1/2 Tbsp sugar (or honey, agave) Salt & pepper to taste Lightly dress the salad with vinaigrette Beer-battered onion rings: Onion ring batter 1/2 cup ap flour 1/2 tsp baking powder 1/2 Tbsp paprika 1/2 Tbsp garlic powder Little bit of salt & pepper Add beer until thick batter consistency Cut yellow onions in ~1/2 inch thick chunks and remove individual rings for onion rings.
