I am not sure this example demonstrates anything ? If the Sun did not have a consistent orbit, then a similar patter probably could be achieved even with a flat surface. In any case, this geometry is way to complex for any regular person. This here proves the curve much better, and much easier.

In the name of science: I think you could reproduce this with a flat world that is itself rotating around a precessing axis while orbiting the sun. Repeating at a different latitude provides enough data to disprove that. (as if we needed more experiments to disprove flat earth)

It demonstrates it's a circle with the sun orbiting the earth as it moves from the Tropic of Cancer , to the equator, to the Tropic of Capricorn and back again. The analemma would be like the figure 8 if it was a ball. But, because it's a circle the the sun travels further south of the equator than it does north of it. It's northern and southern paths would mirror each other on a ball. What we see is a shorter orbit (loop) above the equator and a longer one south of it.
