What happened in this video is called exfoliation because the later or sheets of the rock breaks away from the main rock which is caused mostly by weathering

This is thermal Expansion and contraction which resulted in exfoliation ....it's a geologic phenomenon

This is the process of rapid cooling and heating of rocks where the outer layers expands and contracts faster than the inner layers. This causes cracks and in some cases, the outer layer slides off in chunks or large portions. It's called weathering in geography.
