I have said the same thing for probably 6-7 years. No one has any good answer for why water vapor from jet engines would start & stop ... and linger in the air and slowly spread out visibly throughout a wide area for many hours (producing thin cloud cover over the entire sky).

Contrails behave differently depending on altitude and humidity so that kind of variance makes sense to me
