You can force the look keybinds to apply mouse directional movements, either through macros or remap software's like REWASD. This is just like old Apex Legends and Fortnite. Latias is the easiest to find a path for since you can see it. I find that you only have to tag the corner of the roof for it to spawn in. The despawn position can vary depending on how much Latias has moved around; sometimes I have to run a bit even after jumping off.
