I will never get this. I get taxed on my income, then i used my already taxed funds to buy stock, keep in ISA, get a morgage, and then i get taxed on the interest or assets i get with my already taxed pay?

Tax on cash in a S&S ISA is pathetic because you need funds to pay for the management charges. It’s not being put in disingenuously to benefit from a minor amount of interest on the remaining £8k Simply need a low tax-free threshold to account for that
