First time back at Babbo since Starr took over, last time I was here Mario Batali was still at the helm. Started with the Tagliatelle Tartufi with fresh Tuscan white truffles paired with the 2011 Barolo Renzo Seghesio, 'Ginestra.’ I’ve had Tagliatelle Tartufi at numerous high end Italian places in NYC, this was my least favorite, the best? Santi hands down. Babbo’s version seemed to still be swimming in Pasta Water, and not a lot of flavor. While the pasta was good not great, the Barolo exceeded my expectations. Followed with their 100 Layer Lasagne with parmigiano-reggiano crema, bolognese, Pugliese tomato marinara. Last time I had this was at Mario’s Del Posto. The portion at Babbo is family style for 4ppl, presentation is amazing. Was probably the only dish I remember loving at Del Posto, and was better here, by a ways! Paired tonight with the 2010 Brunello di Montalcino Mulinari, 'L'Aietta.’ Both the wine and Lasagna 10/10. Pure indulgence and flavor 💣! A must have. Currently my favorite lasagna in #NYC. Vibe and energy still very much as it was under Mario. I felt the service was better, friendlier, than prior, and food quality very similar maybe a little better than my prior visit. Fun place with a group, lots of energy and “vibe.” Overall, a better experience today than prior, and would come back with a larger group to explore more of the menu and their large list of Italian wines more fully. Didn’t hurt that the music tonight was all 80’s…

Add original, natural limestone and fossils and you’ll en up with “natural” limestone. (With a bit of potassium residue.) Any questions? The secret recipe maybe? Anyone interested? Here you go: 1. Burn 🔥 everything around you and collect the wood ash 2. Burn natural limestone (calcination) to produce quick lime Steps 1. and 2. can be combined into one step. 3. Make wood ash lye the traditional way, by dripping drip 💧 water on wood ash and collecting the water that went through the ash. Any vessel will do but an oak barrel is the traditional way doing it. I used a plastic bucket with holes at the bottom. The wood ash lye is mostly KOH and K2CO3. What we need is CaCO3. We need to change the letter K to letters Ca. We’ll do it by adding the letters Ca to the liquid. 4. Add quick lime (CaO) or hydrated lime, slaked lime (Ca(OH)2) to the lye until it stops bubbling in vinegar. (We badly miss a decent video at this point, Marcell!!!) 5. Add (or don’t add) fossils = natural limestone rubble to the mix, stir well 6. Get rid of of the excess liquid through a nub Now any expert can tell you that this will never make a stone because of two reasons: 1. Billions of years and 2. High pressure are needed Well, no. The first point is just total nonsense, and although the second has something in it, it is false. Virtually ANY pressure will make it, including my current technique of squeezing it in a kitchen cloth. I’m not kidding. No pressure- no stone, that is correct. But only a minimal level of pressure, using my bare hands is enough to push the freshly made CaCO3 molecules close enough for crystallization (calcit) to begin. And here we are.

I lost one cat to cancer. Nearly lost another to diabetes. My purebred lab was constantly sick with allergies and infections. All three were eating "premium" pet food recommended by vets. Here's everything I wish I'd learned sooner: 1. Feed them a clean, low-carb diet. Our diabetic cat used to be addicted to high-carb treats and food, the stuff sold in most pet stores. It’s the pet version living on Pop-Tarts and Twinkies for us. After switching to a low-carb, high-protein diet, she no longer needed insulin and lived a long, healthy life. A raw carnivore diet from clean sources free of pesticides and antibiotics is arguably best for both cats and dogs. 2. Only feed them two meals per day. We made the mistake of leaving food out for our cats all day. I’m sure our younger cat (that died of cancer) was metabolically damaged from this. Neutering him too early also negatively affected his health, as he developed a pot belly soon after. Time-restricted eating benefits humans and animals alike. So, aim for an 8-hour feeding window or less. Don't feed them 3 hours before bed or 1 hour after waking, then gradually shrink the window. You'll notice more energy in yourself and healthier weight and digestion in your pets. 3. Only give them pure, clean water. We gave our cats tap water for years. While chlorine dissipates quickly, chemical residues, heavy metals, and hormones remain. Reverse osmosis or spring water proved to be the best. You can remineralize RO water with products like this: (ad) 4. Detoxify Pets are exposed to more toxins than we are. Their food is loaded with pesticides, antibiotics, and heavy metals. Artificial fragrances, chemical cleaners, and lawn pesticides add even more toxic stress. Like I emphasize in my book, “Ultimate Health,” constipation is the first thing to address in detoxification. The same goes for pets. If their bowel movements are strained, this needs to be improved. Increasing their hydration and fiber intake can help, as can fish oil and probiotics.
