Thirty years ago, I worked some shifts operating waterjet, laser, and plasma cutting machines to finance my studies. The pumps on these waterjet cutting machines are incredibly loud.

It not just water pressure they add a sand like material called garnet that mixes with the water to helps cut the material. I know this because i use this machine every day to cut stones

When I was a kid we lived very near a very large cemetery. After a new headstone went up, we used to like watching the man carving into the granite stone. He used a water jet under pressure. Carved it like it was warm butter. Small hand held pin point head powerful enough to carve both granite and marble.

When water cuts metal it must have an abrasive medium to help the cut. Fine garnet is used.
