Your mom told you not to swallow watermelon seeds. Turns out she had the wrong seed. Dried watermelon seeds run about 28 grams of protein and 515 mg of magnesium per 100 grams. We spent our childhoods spitting them into the grass. And it’s not just watermelon. Pumpkin seeds bring magnesium and zinc. Sunflower seeds have vitamin E. Flax and chia bring fiber and ALA omega-3s. Apple seeds are different. They contain a compound that releases cyanide when crushed or chewed in bulk. Accidentally swallowing a few whole isn’t the concern. Avocado pits are another story. Interesting early lab work, but not enough human safety data to make eating them a good idea.. Funny how many of the seeds we learned to throw away turned out to be food. You can roast the seeds or make a tea out of them! You can also make watermelon seed milk! Recipe: Scoop out seeds and clean well, removing all pulp. You can also soak in water for a couple hours. Let dry overnight. Drizzle with a little avocado oil and seasoning of choice. Roast on 320 for 15 minutes. Let cool completely! Eat them as a snack or top your salads, Buddha bowls or oats with them! Oooh maybe even add them to granola!
