First she’s brining the pork to cure it a little, the oranges add flavour to the salty brine. You just don’t get to see how long it sits in the brine. Usually it sits for a good couple of hours or longer. Then she’s toasting rice. This takes about 20 mins to do and makes something called khao khua when it’s powdered. The squeezed oranges and other ingredients will be used to make a nice fresh toasted rice flavoured accompaniment/glaze for the pork once it’s cooked. It’s authentic Thai style. Beats cheese on bland beef burger anyday. Lol
