I dont get it... why is this effect taking place slightly off the ship instead of directly beneath the engines?

You're seeing it flying out of the fuel cloud from engine shut down/venting. It follows it in orbit if it doesn't maneuver to escape it. It's being lit and pushed around by the engines as Starship flies out of it.

I have no clue what I'm looking at. What is that vapor? Are we looking up towards the top of the ship here?

Hear me out... They're using RCS to counter the torque the single raptor is applying. The RCS plume is being lit by the raptor?

It's still floating. They're going to have to torpedo it to sink it.

That shape is the vacuum doing it. With no air pressure squeezing the exhaust inward, the plume stops being a column and just keeps expanding until it runs out of gas. Same engine, same throttle, at sea level it would be a tight pencil of flame.

I don't get why the plume (?) doesn't appear to be originating from the engines but somewhere forward off camera.

It was just having fun going “aerial”🏄 on an atmospheric wave.

I took my sweet minute to realise the camera was pointed to the nosecose xD
