My guess is that this boss is following the side story mechanic where they want you to parry for the “cool pyrois cutscene” as a nice way to end the battle and they just forgot to take it out for normal high risk run.

This boss has forgotten how to transform, but he's invincible without transforming. You could try disconnecting from the internet to break the connection and then you can come back.
