I don't like this salt encasement trend on meat. Feeling like it's a way to overcharge you. This is a technique that works on fish and for good reason. You put your seasons INSIDE of your whole fish and the salt keeps the moisture inside, steaming those seasonings into the fish from the inside out. Please tell me how that works with a slice of beef? It doesn't.

I think it’s a legit method but I also don’t disagree with you on the marketing angle of it.
