Space food requires a long shelf life so we only receive fresh fruits or vegetables during a new crew arrival or a resupply mission. Having a tangible reminder of life on Earth is a morale booster and a welcome addition to a somewhat repetitive menu. But for future astronauts on deep space missions this luxury simply won't exist. That's why space agencies are investing in plant growth systems and sustainable food solutions that can help support astronauts on future missions.
