First thought is obvious, he's getting paid by the hour, not piecework. Could be for the benefit of teaching so the observer sees exactly how it should be done. Good bricklayers work so fast, it is hard to see details of the process.

If do it right the first time was a person. Because facebrick takes longer to lay because you don’t want to stain it with mortar and/or have another exercise of cleansing the brick after.

Possibly to avoid smearing the black mortar on a porous brick face. Near impossible to clean. Extremely slow moving here. U can be careful and move 5x faster than this.
