The dark stuff is usually just surface mold on the rind, which producers brush and wash off all the time because the rind is basically a sealed wall and the inside stays fine.

Surface mold on a hard cheese rind is normal. Usually they just brush it, not put it under the tap like a dirty pan.

The dark layer is just surface mold on a hard cheese rind totally normal after aging. The rind is a sealed barrier, so they brush and rinse it off to clean the outside before cutting. Inside stays fine. 🧀

That’s a whole Parmesan wheel getting a bath. The dark stuff is just rind + mold from aging. You’re not supposed to eat the outside raw like that, but you also don’t usually scrub it like last night’s pot.

It looks like they are going to eat some cheese. If it was mold, they would have use brine to clean it off. Removing everything is not mold. Doing circular motions with straight lines on the wheel from storage is kind of retarded.

cloth bound cheddar is what it looks like. Scrubbing the exterior makes the mold not eat up the cheese while it ages. After scrubbing with water it is usually wiped down with vinegar to kill any exterior mold while the cultures inside work their magic
