I’m trying to understand something… ‘Last for weeks’— is this with or without refrigeration? Because isn’t it normal for fried rice to last for weeks and remain fresh if you refrigerate it and power supply is good? I’m genuinely curious.

This is NOT the reason the rice doesn’t go bad. If you have stable power supply and your food doesn’t stay more than 2 hours on the counter top before putting them in the fridge, they won’t go bad. I’ve never fried my rice like this and my fried rice has NEVER gone bad.
