Set the time/date on everything else to match the watch’s date?

I am still waiting for a smartwatch that doesn't care about being connected to a phone

Didn't run into that on my Casio G-Shock. BTW it connects to radio to sync time. Radio!

I think the entire WearOS (5.1) is totally obstructed by requiring a phone for it to work. My Pixel Watch 3 does the same thing. I really want to get a phone-free experience, but I wish the WearOS and its apps weren't totally dependent on the phone.

I don’t want to glaze apple in stuff like this, but if the date desynced you could plug it into itunes and it would sync to the date of the pc

Should be illegal to force-brick a device without internet.
