I'm no card shark, but had something similar happen in Vegas (MGM) a while back. Won a hand, was paid out, wanted to let it ride - left it out, but didn't stack it, but the dealer dealt the cards. When I pulled a 20 the dealer tried to cancel my bet. Pitboss backed her up of course. I left, went and got a hooker and some blow, can't really remember.

Counting cards turned out to be way easier than I’d thought. You don’t have to memorize the quantity of every single rank (number or face card), but three categories: plus, neutral, and negative. I’m surprised more people don’t do it.

Back in my Blackjack days I got the boot from several casinos in Las Vegas for this and accusations of other types of counting. Of course, that was back when you could find single or double deck games. Now it is all multi-deck shoes with random reshuffle points. "Plus-Minus", or Hi-Lo, counting is pure luck these days and no longer a real thing in the big casinos. My guess is this is staged theater.
