Just tried つくりおき食堂まりえ’s "Melt-in-Your-Mouth Eggplant Lasagna (No Layers Needed)" and it was absolutely delicious! I used my own homegrown eggplants (picked fresh from the garden today) and simply spooned the seasoned meat on top with cheese — no pre-cooking the meat at all. The eggplant turned out super melty and soaked up all the juicy meat and gooey cheese flavors, with those sweet burst tomatoes. I’m amazed that my son, who usually won’t touch eggplant, ate an entire plank! Thank you, Marie — this one’s a keeper.

This is hands-down the best bread I’ve ever baked. Just made shokupan (Japanese milk bread) for the first time. House smells amazing! Super soft, fluffy, and delicious. Tomorrow I’m making Japanese fruit sandwiches with homemade whipped cream and strawberries using this bread. Thanks everyone for the real-time tips. 🍞

🍒 Southern Ambrosia Salad: A True Classic! Had a craving this morning and whipped up this heavenly Southern dessert named after the food of the gods. Dates back to the 1800s, potluck staple by mid-1900s. Whipped topping, sour cream, coconut, mini marshmallows, pineapple, mandarin oranges, halved maraschino cherries, chopped pecans. Mix, chill, serve. Pure nostalgia!

My family loved the karaage chicken I made so much I had to try it with tofu. I made a homemade marinade with soy, ginger, garlic, mirin, sake, sesame oil and dashi and oh my goodness, dashi changes everything! Double-fried it crispy and it turned out absolutely amazing. Crispy outside, silky inside. This was one of my favorite tofu dishes I’ve made. Have you tried tofu karaage?

A Japanese chef suggested I try his Corn & Cheese Yaki Onigiri, so I went for it and made it three different ways. I marinated fire roasted corn and cheese in soy sauce, mixed it into warm rice with a touch of turmeric for that golden color, then tested three versions: - Regular: pan-fried exactly as he recommended - Panko-breaded and fried - Baked inside cornbread muffins Sweet corn, salty cheese, savory soy — this combo is fire. I did it! Made tempura ice cream at home and it actually worked. My daughter filmed it for me. Crispy hot shell, ice-cold creamy center. The secret is wrapping the ice cream in pound cake first, then dipping in tempura batter. The ones rolled in panko with cinnamon and brown sugar were so good I did the rest that way! Who wants one? 🔥🍨

I made Chicken Nanban for the very first time today and it turned out ridiculously good! 🔥 Big thanks to amazing gLace for suggesting it this morning and introducing me to this dish. Crispy shio koji chicken, sweet-tangy chili glaze, and bright homemade tartar with garden spring onions and capers… the perfect combo. Excuse the family-style plating. We weren’t sure about the tartar at first, but serving it separately was pointless. Everyone absolutely devoured it!
