What Hana Mohsin Khan | هناء should have actually married - a big plate of juicy mutton Mandi. 🤷🏻‍♂️👀 Our 1024th time here at our favourite - Mandi @ 36 - devouring the exact same dish. She’s never looked at me with this intensity even once - that adoring, unrestrained, lustful look at that huge plate of unbelievably tender pieces of mutton nesting on a flat bed of aromatic rice - sprinkled with fried onions and roasted dried fruits. For folks unaware, Mandi is an Arabic version of Biryani that’s become the rage in #Hyderabad over the last few years - and deeply polarised biryani lovers more than politics. The kind of Mandi quality available in Hyderabad is something she and I haven’t been able to find even in the Middle East. The process is very simple: mutton is stewed in spiced and salted water until the meat is ready to fall off the bone. Then rice is cooked in the same liquid and laid out on a huge flat plate. Fried onions and roasted dried cashews, raisins and pine nuts are generously sprinkled on top. It is served with salad, garlic mayo and a tomato salsa. The resulting dish is an incredible explosion of subtle flavours that go straight to your soul and cease any conversation on the table. Once you begin eating, all you do is sigh and munch and reach for another morsel, repeating the process until your stomach is full and your life seems delightful. The large plate is shared between the diners - a communal eating experience where you share the joy of good food off the same plate. Hundreds of #Mandi restaurants have bloomed in Hyderabad offering myriad combinations. But our fav and the best remains Mandi @ 36 (this is not a paid or sponsored post).
