Built to eat all week. ⸻ DENSE BEAN SALAD (WHAT’S IN IT): •Chickpeas (the base — dense, filling, protein-packed) •Cherry tomatoes, halved •Green grapes, sliced •Fresh spinach, chopped •Fresh basil, chopped •Yellow bell pepper, thinly sliced •Red onion, thinly sliced DRESSING: •Olive oil •Fresh lemon juice or red wine vinegar •Salt •Black pepper That’s it. No sugar. No mystery sauces. ⸻ HOW TO MAKE IT (2 MINUTES): 1.Rinse and drain chickpeas well. 2.Chop all produce into bite-size pieces. 3.Add everything to a large bowl. 4.Drizzle with olive oil and lemon juice (or vinegar). 5.Season generously with salt and pepper. 6.Toss until glossy and well coated. 7.Let it sit 10–15 minutes (this is where the magic happens).
