Making BBQ competition style chicken thighs. They’ll often remove the skin or peel it back and sometimes scrape it then season then put the skin back on. The skin is supposed to be bite through when the judges eat. Shouldn’t tear off. They’ll usually trim the thighs up to be uniform shaped. Some people even use molds while cooking to stuff each thigh in so they come out uniform looking
