2 eggs, juice of 1 lemon, 1 clove garlic, salt, chives, whisk while pouring in olive oil until desired consistency. I think I can do this as long as my wrist doesn't give out on me.

I just made some tonight. I use a mini cuisinart food processor to speed things up. It has tiny holes on top to drizzle the oil in. I blend the egg first then add a tablespoon of dijon and a tablespoon of red wine vinegar and some salt. I blend this and typically let it sit for a few minutes on the assumption the acid will kill any raw egg issues - although buying high quality local eggs helps too i'm sure. I've never had any issues. Then I drizzle in between 2/3 to a cup of avocado oil while running the food processor to get the consistency I like. I use avocado oil because it's healthy and I like the taste. It seems to last a couple weeks in the fridge.
